Routes for palates with the Michelin Guide

If you are one of those people who only eat in restaurants with good reviews and if in each destination you visit you are looking for establishments where you can taste the best local or “author” dishes, do not hesitate to continue reading. We are going to do a very select gastronomic route following the recommendations of the Michelin Guide. Ideal for exquisite palates.

Every year the Michelin Guide is published, which includes the best restaurants to eat in each city.  It includes more than two thousand establishments in 44 European cities and also information such as maps and hotels. This guide is intended primarily for business travelers, although it can be used without problems by tourists who eat well.

The best Spanish restaurants according to the Michelin Guide

Regarding sites recognized by the Michelin Guide in Spain and Portugal, in the last edition eleven restaurants have been recognized with the highest distinction, which are three stars. Besides them, there are 30 with two stars and 177 with one star. A total of 218 award-winning restaurants, of which 195 are in Spain.

In the Bib Gourmand category, the guide lists 289 establishments. Of them 252 are in Spain and 37 in Portugal. This category includes establishments that stand out for their good value for money.

We are going to see some of the restaurants recognized with those coveted stars. There are them scattered throughout the geography.

1. Lasarte (Barcelona)

It has 3 Michelin stars and belongs to Martín Berasategui. It is located in the Monument Hotel in Barcelona and was the first to obtain this distinction in Barcelona. One more reason to enjoy their dishes, in which they mix tradition, innovation and excellent raw materials.

2. DiverXo (Madrid)

It was the great winner of the Michelin Guide in 2014 and continues to be one of the restaurants that maintains its three stars year after year. It opened its doors in 2007 and is quite in demand. Its creator is David Muñoz, who was first a modest establishment in Bravo Murillo, which in a short time became a success.

DiverXo proposes a very unique gastronomic experience in which Mediterranean and oriental cuisine are surprisingly fused. Later they moved to another larger and brighter place in the Spanish capital. It must be reserved one month in advance.

3. Annua (Cantabria)

It is located in the bay of San Vicente de la Barquera, surrounded by beautiful coasts. The young chef Óscar Calleja and his team of professionals offer two menus: Gastronomic and Experience, with the best products of each season.

Among the dishes that we can taste we find blanched oysters with ceviche ; spider crab, chipotle and tamarind taco; grilled foie gras with eel; hedgehog royal; rice pudding and cheese; passion fruit nougat; Sagrario egg and cream millefeuille.

4. L’Escaleta (Alicante)

It has two Michelin stars and perfectly combines avant-garde with tradition, without losing sight of Valencian cuisine. An added point, the environment of this restaurant is nothing less than the slopes of Montcabrer.

Among the dishes that can be tasted are cheese with almond milk, rice with snails and fennel and herb aioli; red mullet with almonds and saffron; grilled lamb sweetbreads with roasted onions; and supermousse of chocolate, hazelnuts and coffee (among other delicacies).

5. Raúl Resino (Castellón)

In the town of Benicarló we find this charming place with Mediterranean and oriental touches, a wonderful fusion. They work with a unique menu that changes according to the season.

For example, in autumn you can taste betas and miso broth with wakame seaweed ; anchovy butter and chard bocabits; cod brandade with sweet chili, cold bisque, sea nettle and caixete with lemon; prawn with fennel and flying fish roe; Old seamen’s stew of octopus and chickpeas or marinated mackerel with almond smoothie.

6. Noor (Córdoba)

The Michelin Guide has also awarded this Arab food restaurant, founded by Paco Morales in his hometown. It offers us the best of Caliphate Andalusian food, and even the decoration is Moorish. Its dishes include roasted Iberian prey with bean hummus, abuñoladas aubergines with cane honey and carob furniya.
